Summer is so close we can almost taste it! We can’t wait to sit by the pool, drink in hand, with our favorite book and relax. The kids are at summer camp, hubby’s at work, and it’s time to wind down from all of the school year stress with our favorite cocktail in hand. Here are some of our favorite summer cocktails to enjoy by the pool!
The Classic Mojito
Always refreshing, always tasty, and always easy to make!
Ingredients:
- Fresh mint
- Simple Syrup
- Rum
- Soda Water
- Lime Juice
Recipe: Muddle the mint, add to a shaker with simple syrup, rum, and lime juice, shake, pour over ice and top off with some soda water! Garnish with a few mint leave if you’re feeling fancy!
The Aperol Spritz
Our favorite citrusy summer drink. You can’t go wrong with a classic! Plus this one is SO easy to make!
Ingredients:
- Sparkling Wine
- Aperol
- Soda Water
- Orange slice
Recipe:
Chill your ingredients, add some ice to a glass, and pour to your heart’s desire! Be sure to garnish with an orange slice and if you’re feeling extra citrusy, squeeze some orange juice into your finished drink for an added edge!
A Vodka Spritzer
Mom to mom, you’re lying if you say you don’t like Vodka! These Vodka Spritzers are arguably one of the MOST refreshing drinks we’ve ever gotten our hands on.
Ingredients:
- Vodka
- Soda Water
- Cranberry Juice
- Simple Syrup
- Strawberries
- Lemon
Recipe:
Mix everything but your soda water together in a pitcher (to your heart’s desire) and let it marinate in the fridge for 30 minutes. Add about 3 - 4 table spoons of the mixture to a glass with some ice and top it off with your soda water and a few strawberry slices! Garnish with a lemon wedge and viola! Ready to enjoy!
The Lillet Spritz
If you’re a fan of floral notes and like to feel a bit more sophisticated, but don’t want to put in any extra effort, then the Lillet Spritz is probably perfect for you!
Ingredients:
- Lillet Blanc
- Gin
- Lemon Juice
- Simple Syrup
- Soda Water
Recipe:
Literally the easiest recipe ever–just stir the ingredients into a glass, top with bubbles, and garnish with lavender or thyme! Want it chilled? Shake it with ice before you top with bubbles or add a few ice cubes to the final product!
The Watermelon Martini
If you’re a cosmo fan but want to try a new flavor profile, then you’ll LOVE this Watermelon Martini!
Ingredients:
- Watermelon
- Mint
- Vodka
- Cointreau
- Lime Juice
- Simple Syrup
Recipe:
Muddle your watermelon and mint, add to a shaker cup with allllll of your other ingredients, shake, strain, and serve! Garnish with a tiny watermelon slice or lime wedge! Enjoy!
